Sometimes food doesnt even need to be eaten to fulfill its role in the celebration. Writes Jane Gentry Vance, an author featured in A Kentucky Christmas and in the bookclub special:
This is the kind of Christmas fluff that I make because its been part of my Gentry family Christmas for decades. Im one of the few who actually relishes it, but it looks pretty on the table and makes for continuity!
In an 8 X 13 pan, mix:
1 8-oz. container of Cool Whip (lite for improved calorie count)
1 large can condensed milk
1 large can crushed pineapple
1 can cherry pie filling
1 teaspoon vanilla
1/2 teaspoon lemon juice
Freeze. Serve frozen, in squares, on a bed of lettuce. Let sit for 10 minutes before serving.
